Our prestigious client based in Edinburgh are seeking an experienced Head Chef to lead their kitchen team. This role will begin on a Temporary basis however will become Permanent for the right candidate.
Your Time at Work
Hours of work are primary Monday to Friday dayshift however some weekend work may be required.
Summary of Main Duties:
Catering:
To lead the Catering Team on a daily basis, overseeing and role modelling high standards of cooking and service.
To plan and develop daily and seasonal menus considering customers nutritional needs and special dietary requirements in partnership with Catering Team Lead and dietician.
To ensure that all staff have full knowledge of allergens management in relation to their roles.
To provide a responsive and customer focused catering service through all catering areas.
To liaise with staff regarding catering requests.
To provide a high standard of customer service to all people using the catering services.
To lead in providing all aspects of hospitality for functions.
To ensure compliance with all aspects of the Food management system, from procurement to service.
To ensure effective procurement, menu planning and waste management systems in place to ensure efficient use of resources.
To actively seek feedback from customers, seeking continual improvement and a person centered approach to catering in line with site values.
Supervisory:
To supervise and direct kitchen staff daily ensuring high standards of service are maintained at all times.
To supervise and support the catering team ensuring appropriate induction, training and supervision in place, working in partnership with the team as necessary.
To ensure that all new staff participate in an appropriate induction and development program relevant to their role
To initiate and manage change effectively.
To participate effectively in the process of staff recruitment, selection and retention.
To support the management of staff attendance, performance and conduct in line with site policies.
To participate in regular department team meetings, ensuring all appropriate information and updates are communicated to the team.
To work within budgets set by Senior Leadership Team in relation to catering resources
To co-ordinate staff levels in the department according to the needs of the service, ensuring adequate staffing is available.
To promote a culture within the department in line with site values.
To identify early signs of potential or actual conflict within the team and work with others to achieve a solution.
To attend meetings representing catering services as requested by the Head of Facilities and Estates.
Risk Management
To lead in all aspects of the Hospice Food Management System in partnership with Catering team lead.
To ensure high standards of personal hygiene, food safety and food hygiene at all times.
To ensure the completion of all daily and weekly checks, daily and deep cleaning and all other regular tasks required from the site Food management system and that all documentation and verification checks are completed, corrective actions are identified and that concerns are escalated promptly.
To comply with site Policies/Procedures and Food Standards Scotland Regulations.
To ensure hazards/faults are immediately reported, equipment isolated and highlighted as being out of order where appropriate in line with Health and Safety policy.
To ensure the maintenance of daily security procedures for stock, equipment, money etc.
To ensure the team comply with daily disposal of waste procedures according to the site Waste Management Policy.
To ensure best practice in relation to safe systems of work complying with site health and safety guidance.
Our Perfect Worker
Qualifications required: NVQ level 3 in food preparation or equivalent / City and guilds 706/1 &2
Intermediate food hygiene certificate.
Experience: Experience of managing a team within a kitchen environment .
Catering experience within a healthcare setting and also be able to demonstrable knowledge of HACCP / COSHH / Health and Safety legislation
Skills:
Evidence of leadership and team working skills.
Effective communication and organizational skills.
The ability to demonstrate behaviors in line with the sites values.
The ability to work in a fast-paced setting, continually re-prioritizing whilst creating a non-stressful and supportive environment for the catering team.
Self-motivated, proactive and positive approach to solving problems.
